Trying to determine which battery/ size etc I need for my new Jack ?

You will need a 12V battery for the Stromberg Carlson Electric Trailer Jack Part # JET-5000.
The amperage draw for this jack at full load is 25-amps, so that is what I would want to know when shopping for a battery.
