Question:
for a 1 1/4inch receiver, whats the largest rise mount you have? I see 5. Are there any that are higher? I have a bike rack that sits on a convert-a-ball mount that screws into where one would screw in the ball, and I need to raise the bike rack more than 5inch higher than it is with a standard ball mount. thanks. Oh, and would such a 5+inch raise mount be wobblier than a straight one? If so, what do you suggest for stopping the wobble? thanks.

A 1-1/4-inch hitch can be either a Class I or a Class II type. Your hitch should have a sticker that tells you which you have.
In our Class I ball mounts the most rise is indeed 5-3/8-inches, with Curt ball mount # C45028.
For a Class II ball mount the most rise, 5-1/2-inches, comes from Brophy ball mount # BM96.
A ball mount with more rise will tend to wobble more than one without rise since the actual weight load on the hitch is moved further away by that rise. You can help immobilize the ball mount in your hitch by using an anti-rattle device like the Roadmaster Quiet Hitch for 1-1/4 Trailer Hitches, part # RM-061-125. More stability for the rack can be had by using a support strap like # 18050.
