Question:

My boat trailer has tires that say G78-14ST on them can I put on ST215/75R14 with a load rating of C and not have an issue

The modern size equivalent to the G78-14ST that you have is the 205/75-14. The ST215/75-14 size you are interested in is close enough to this size that it would work just fine.

I would recommend the Provider ST215/75R14 Radial Trailer Tire - Load Range C # TTWTR21514 as it is a radial tire in the size and Load Range you want plus it has a higher speed rating of 81 mph unlike most trailer tires that are only rated for 65 mph.
