Hello there. I am needing the spacer blocks that slide into the from of my 1997 Jeep Cherokee to mount my hitch. Can you tell me the dimensions of these blocks??

The dimensions are listed in the installation instructions that I've linked for you. I've also copied the diagram for you.
The bolt plates aren't something you'll be able to find at your local hardware store, and the hitch manufactures don't sell them as an individual part. You'd need to use the entire hardware kit, which is actually a good thing, because you'll get all new hardware that's the correct size and grade (hitch installation bolts are only meant to be torqued one time.)
For the replacement hardware, you'd need to order the Replacement Hardware Kit, part # RHK. On the product page, type the part number of the hitch you're using into the provided field, then choose the hitch manufacturer from the drop down menu.
