I spoke with my contact at Curt and the Class III Trailer Hitch Receiver, # 13339, may work for you. Although this hitch is confirmed to fit a 2000 Chevrolet Silverado 2500 with a deep drop bumper, this has not been tested with the Knapheide utility bed so you will have to take a couple of quick measurements.

In order to determine if this hitch will work, you will need to measure from the bottom of the truck's frame to the bottom of the bumper and the distance from the closest frame mounting hole to the outer edge of your bumper. Now you will just need to compare these measurements to the following measurements for the hitch.

The hitch measures 8 inches from the mounting tabs to the top of the receiver tube and 10-1/2 inches from the closest mounting tab to the outer edge of the receiver tube. I have included pictures to illustrate these measurements.

Basically, if your bumper is less than 8 inches below the bottom of the frame and does not stick out further than 10-1/2 inches from the closest frame mounting hole, we have found a hitch for you.
