For top-mount installs without clips, silicone sealant and weight while it cures can hold it; undermount setups use studs with L-brackets and wing nuts tightened in a clockwise rotation, and swapping a double bowl for a single can free space for larger pots.
Yes, some undermount kitchen sinks can work as a top-mount. If the sink has studs, slip L-brackets over the studs, lightly tighten wingnuts, then go around in a clockwise rotation to snug them. If there are no mounting tabs, use silicone sealant and weight the sink while it cures. Check if faucet holes are provided; you may need to cut a hole in the countertop for a single-mount faucet.
