From the information I can find I believe your 2019 GMC Acadia will have the wiring routed back towards the rear of your vehicle whether you have the factory tow package or not (see attached photo). If you check up under the rear bumper of your Acadia you should find the wiring harness that you would plug the T-One # 118720 (for a 4-Way) or # 118276 (for a 7-Way) into. Your best bet is actually the saddle mounts. Unfortunately, there's no good J-Style racks that are locking and will have the weight capacity for your kayak. Saddle mounts directly transfer the weight to the bars, so they are a lot easier for fitting heavier kayaks.

Your 2018 GMC Acadia actually has blunt cut wires for you to splice in a brake controller like the Tekonsha Prodigy P3 # 90195. The last Acadia to use the Adapter # 3026-P that you referenced was the 2017 Limited which was the same as the 2016 model year. The 2017 New Body and newer have the blunt cut wires up under the dash.

The Hopkins # HM40975 that you referenced plugs into a US Car Connector (see attached picture). This typically will replace a factory 7-Way on a vehicle so if your 2015 GMC Acadia didn't come with a 7-Way you might not have that connector. If it does exist though it will be located somewhere around the trailer hitch.

Hey Dominic. Since you have the AT4 model of the 2021 GMC Acadia you'll need the Draw-Tite Hitch item # 76023. This hitch is custom fit for your Acadia and bolts to it with included hardware. It's going to mount behind your rear bumper cover and be completely concealed when you cover it with the rear trim piece.
The Draw-Tite Hitch item # 76023 is a class III hitch with a 2" receiver. It has a 4,500 lbs towing capacity and a 675 lbs maximum tongue weight.

So the red wire of your brake controller needs to be connected to a circuit of your 2018 GMC Acadia that sees voltage only when the brakes are applied. If you used a custom install harness on your Acadia like the # 3026-P to install the controller then most likely you have a blown third brake light fuse since that's connected to the stoplight circuit for the brake controller.

If the 2025 GMC Acadia you are looking at has the factory towing package, from what I could find, there will be 4 wires wrapped up in a bunch of cables in a harness on the leftmost side of the driver's footwell. Remove the black tape and you find the 4 wires. It sounded like it was a pain to find it, so patience will be needed. Vehicle manufacturers do not recommend placing any cargo directly on sunroofs. The glass was not designed to support additional weight.
A better option for you would be to add crossbars to your factory side rails and use a roof basket and a cargo bag or a roof mounted cargo box. This would keep the load off of the sunroof and allow you to carry more weight.
