From the information I can find I believe your 2019 GMC Acadia will have the wiring routed back towards the rear of your vehicle whether you have the factory tow package or not (see attached photo). If you check up under the rear bumper of your Acadia you should find the wiring harness that you would plug the T-One # 118720 (for a 4-Way) or # 118276 (for a 7-Way) into. The Furrion Refrigerator part # FCR43ACA-BL is not going to overheat if surrounded by cabinets. However, you do not want the cabinets directly touching the refrigerator. They need to be positioned 2" from the sides and 1" from the top in order to allow proper heat dissipation. Did you remove the panel under your driver's side dash? The plug for the adapter # 3026-P should be located there, taped to another harness to the left of the steering column (see attached photo).
This exists if your 2017 GMC Acadia Denali has a factory 7-Way connector at the rear. The plug-in adapter that I referenced will allow you to install a brake controller like the Tekonsha Prodigy P3 # 90195 without hardwiring anything.

The vehicle is indeed pre-wired, as you suspected. To get completely set up, you'll need a brake controller, the appropriate wiring harness to connect the controller to the vehicle and a trailer connector for the rear of the vehicle. You'll need to let down that under dash panel, and look just to the right of the top of the emergency brake pedal. It sounds to me like you are not splicing into the correct stop light circuit. The correct stop light wire you will need to attach the red wire from the brake controller to on your 2017 GMC Acadia is white. To test this, you will want to use a circuit tester like part # PTW2993. Your 2018 GMC Acadia actually has blunt cut wires for you to splice in a brake controller like the Tekonsha Prodigy P3 # 90195. The last Acadia to use the Adapter # 3026-P that you referenced was the 2017 Limited which was the same as the 2016 model year. The 2017 New Body and newer have the blunt cut wires up under the dash.

As it is the fascia door on your 2018 GMC Acadia cannot be reinstalled once Draw-Tite trailer hitch # 76023 is in place. It can be trimmed and put back on, see instructions link, but not will not fit unless it is trimmed.
