For an 80,000 Btu griddle, you need a regulator that is capable of handling that amount of flow, such as the Low Pressure RV LP Gas Regulator # 37207-30335.
This is a 175,000 Btu/hr low pressure regulator, and has 1/4" FPT inlet and 3/8" FPT outlet; the connections are the other thing you will need to be aware of, as you'll need the right ones for your application.
