What size marine carpet would you suggest for 2 boards 2 x 6 x 96 Thanks

For 2 boards that are 2x6 and 96 inches long, I recommend the CE Smith Deluxe Marine-Grade Carpeting for Bunk Boards - Black - 18' Long x 18" Wide # CE11349. This will allow you to cover your boards completely. That will allow better hold to the boards because there is more surface area to attach the carpet to the boards. One roll will cover both boards well.
I recommend using stainless steel staples so the staples don't corrode. You can find them at your local hardware store.
