According to pages 167-169 of the online owner's manual for your 2017 Toyota Tundra Crewmax 5.7L V8 the most trailer weight this truck can tow is 10,100-lbs. You will want to refer to your printed manual too since this maximum capacity depends on the specific engine and drivetrain and whether or not you have the optional towing package. Many versions have lower capacities. You can also check with your local dealership using the truck's VIN.
For 5th wheel towing in this truck your 5-1/2-foot bed will require a pivoting pin box, such as a Sidewinder, Revolution or Turning Point. All of these shift the truck-trailer pivot point back by 22-inches, closer to the trailer. You can refer to the linked article for more on Sidewinders. You can use a standard fixed (non-sliding) hitch like the Reese # RP30047 along with custom base rail installation kit # RP50084-58.
For a gooseneck setup you could use the excellent B&W # BWGNRK1257 along with Offset Ball # BWGNXA4585 and wiring harness # 50-97-410.
