According to the owner's manual, when activated by pressing the button, the Tow/Haul feature improves transmission operation by changing the shift points so that upshifts are delayed to keep the engine operating higher in its power band when the transmission shifts. When the transmission is on OD (overdrive) having the Tow/Haul mode 'on' will provide engine braking in all gears, which is useful for when you're descending hills.
I've driven vehicles previously that have had this feature, and it seemed to me the Tow/Haul mode didn't have much noticeable effect unless you were towing something fairly heavy, say 3500 lbs or more.
Depending on what the vehicle's tow package included, you might need the following accessories to complete your towing system:
Ball mount # D-4
Hitch Pin and Clip, # PC3
Trailer ball, # 63845 for a 2 inch or # 19260 for a 1-7/8 inch ball
Trailer wiring harness, # C56172
The Curt Class III hitch you mentioned, part # C13386 would be an excellent choice.
