My 2002 Yukon XL is starting to noticeably squat more than it has the past couple of years. Im pulling a boat and trailer of about 5000lbs with about a 500lb tongue weight. Are these going to help fix the squatting problem or should I just purchase new/stronger springs?

Suspension enhancement products such as the SumoSprings # CSS-1168R are designed to be used with a stock suspension that is in good working order. It sounds like the rear suspension on your 2002 GMC Yukon XL is starting to fatigue some, hence the greater than normal squat, and it would be a good idea to inspect the suspension and replace worn parts as needed.
At that time it would be up to you to add stronger springs or suspension enhancement. Please note that adding stronger springs is going to stiffen up the ride all the time, whether loaded, towing, or empty. The best solution for squat caused by towing a trailer is weight distribution, not suspension enhancement.
To choose a weight distribution system you will need to go by the total tongue weight of the set up. This is calculated by taking the tongue weight of the trailer, when loaded and ready to tow, and adding to that the weight of anything loaded behind the rear axle of the tow vehicle.
If you want to go with suspension enhancement then to avoid a stiff ride caused by stronger springs I recommend using regular springs, if they are indeed needing replacement, and then adding Timbren springs which will not affect the unloaded ride of the vehicle hardly at all. And they will prevent squat.
For a 2-wheel drive 1500 model use # TGMRYS4. For a 4-wheel drive 1500 use # TGMRG25C.
For a 2- or 4-wheel drive 2500 model use # TGMRSB4S. I have linked a help article on Timbren springs and on weight distribution and tongue weight for you.
