Will this thermostat kit work with a Dometic Penguin 2 model CKD640310C serial 03522403 with a Dometic Soft start installed?

Thank you for sending the photos! Yes, the Dometic Single Zone CT Thermostat Kit, part # DMC83ZR, will work with your Dometic Penguin II model CKD640310C, even with the soft start installed.
The soft start won't interfere with the thermostat or control box. The thermostat simply tells the air conditioner when to run, while the soft start manages how the compressor starts up. Since they perform different jobs and are wired into different parts of the system, they work together without any issues.
I think this will be a great fit for your setup and should give you the functionality you're looking for without any surprises.
Out of curiosity, do you usually camp with full hookups, or do you like getting off the beaten path and camping off grid?

We normally are in campgrounds but do boondock when needed. We carry a generator and have solar panels to keep our batteries topped off. Thank you. Bruce
