I’ve got a 6x12 utility trailer that measures right about 72 inches wide inside the rails. I mainly load a side-by-side and occasionally a zero-turn mower. Which RapidRamps kit should I be looking at?

Kevin, since your trailer measures about 72 inches wide (6 feet) inside the rails, you’ll want one of the 5–6-1/2' wide trailer kits, not the over-width versions. The included slide bar / load bar needs to match this width range.
From there, the main decision is ramp length. For loading a side-by-side and a zero-turn mower, the 6' RapidRamps kit, part # e47XV, is usually the better choice because it gives you a gentler approach angle and more clearance for that type of equipment.
If your trailer deck sits lower to the ground or you’re limited on space behind the trailer, the 5' kit, part # e37XV, can still work, but most UTV owners prefer the extra length of the 6' ramps.
