Brenner, since we don't carry that tire/wheel so the best solution we have is to replace both the tire and wheel with the Tamarack ST235/80R16 Radial Trailer Tire # LHCK401. From what I can gather, your 8.75 - 16.5" tire has a section width of 9" and a height of 30.1" when fully inflated, so this replacement which has a 9.25" section width and is 30.78" when fully inflated, should work great as a replacement.
Since this tire is a bit bigger, you're going to want to make sure that you have the additional clearance needed. Also, these tires are a bit different than what you have now, so you'd have to switch to 16" wheels instead like the Dexstar Steel Mini Mod Trailer Wheel # AM20761B.
