Hello.... if I install this hitch, does the rear bumper cover have to be removed?

No, it does not. The Curt Hitch item # C78KR does not require you to remove your rear bumper cover when installing it on a 2023 Ford Edge. It bolts to the bottom of the frame and the crosstube is concealed behind the bumper cover.
I have an alternate suggestion for a hitch. Instead of the Curt item # C78KR, I recommend the etrailer Hitch item # e36RR. These hitches are identical with the exception of cost and the paint finish. The item # e36RR is our house brand hitch but it is made by Curt. I prefer the flat matte finish of the etrailer hitch because it blends in better beneath your Edge's trim then the glossy finish of the Curt item # C78KR. Saving money is also a nice perk.
I have linked installation videos below for both hitches along with the installation instructions so you can see how to get them set up.
If you plan on towing you will also need a wiring harness. There are two options for your vehicle depending on what model you have and both are custom fit. I have listed them below:
Titanium - Curt T-Connector Vehicle Wiring Harness item # C73FR
SEL or SE - Curt T-Connector Vehicle Wiring Harness item # C89FR
To round out your towing setup, I recommend the Curt Towing Starter Kit for 2" Hitches item # C45534. This towing kit will provide you with a 2" ball and a fixed ball mount with a 3/4" rise and 2" drop. It also includes a hitch pin and clip, hitch receiver lock with keys, hitch cover, and a storage case.
