Trying to figure out what size drum brakes I need for my single axle boat trailer that hauls a 21 ft boat and is 6 lug w/ 15 inch wheels??

Based on what you mentioned it sounds like you are in need of a 12 inch brake assembly set like the etrailer set part # AKFBBRK-7-D. This is a hydraulic drum brake set that is free-backing which means that your surge brakes won't activate when reversing. This is a 7k axle set.
