Why Is Trailer Hitch Rated for More Weight Than Vehicle

Question:
How can yall get away with listing tongue weights on trailer hitches for vehicles that are not rated for any towing capacity. For instance, 2008 Prius, Ecohitch, 300 lb tongue weight. Toyota says do not tow with this vehicle. The pic of the motorcycle on the back of the Prius looks downright dangerous.

It's a good question and one we get from time to time. The fact is that trailer hitches are rated independently of the vehicle, which just means that something like the EcoHitch Hidden Hitch # 306-X7196 that you referenced has a 300 pound tongue weight capacity for the hitch itself. As with any aftermarket component, you'll always still be limited by the setup's weakest component, which in this case would certainly be the Prius it's installed on. The owner's manual is always the best place to look for vehicle limits.
I do understand the confusion it can sometimes cause, but we try our best in our expert answers and elsewhere on the site to make the significance of these capacities clear. It's also good to remember that even if a vehicle (like a Toyota Prius) isn't rated to tow a trailer, it could still potentially carry a hitch-mounted accessory like a bike rack or cargo carrier. But having said that, to be honest the picture you referenced of the heavier e-bike on on the back of a Prius doesn't make me super comfortable, either. I will likely see if it's best to have it removed.
