I have a 2004 gulfstream 21mb I’m looking for a rear adjustable hitch to carry our bike rack

The Adjustable Width Trailer Hitch Receiver for RVs part # 13703 is what I recommend for a 2004 Gulf Stream Traveler Travel Trailer. It's adjustable in width so no matter what your frame spacing is, it will fit (so long as it's between 22" - 72"). It has a 2" receiver which is great for anything from towing to hitch mounted accessories like bike racks and cargo carriers. Please note, most bike racks are not rated for use on trailers due to the extended distance from the axle so you'll need to make sure you get one that does. I have attached a link with a list below.
