We have 2 ways that you can accomplish this; you can do it manually or you can use a Power Watchdog device that actively reads and gives feedback to how much power you're using.
Calculating this manually means you're looking at all of the different parts of your motorhome that are pulling power and then noting what they are rated to draw and adding all of that up. This can be a little tricky and time consuming but it can be done.
The Power Watchdog device, found as parts # HU47FR, # HU87FR, or # HU27FR, offer different levels of electrical protection but they all send feedback via Bluetooth and you can use your phone to see the volts, amps, and watt usage in real time.
I recommend at least checking out the Power Watchdog system because it helps to protect the electrical on your RV but also gives you tools to make it easier to know what exactly is going on with your electrical.
