Question:
Is it a concern that the sensor could try to open the rear hatch without the foot motion or asking it to open?

I've checked with my Curt representative regarding your concern. I'm told that there's zero recorded instances of any hitch install causing the rear hatch of a 2019 Lexus NX 300 (or any other vehicle, for that matter) to open unintentionally without movement picked up by the sensors.
If you'll be towing with the hitch, you'll also need a trailer wiring harness like # 118652, a ball mount like # D-28 along with a # PC3 hitch pin and a trailer ball like # 19260 for a 1-7/8 or # 63845 for a 2 inch ball.
I've linked to an install video for the Curt # C13337 Class III hitch.
