Assuming I just use the universal harness that comes with the controller and hook the factory blue trailer brake wire that was tucked under the carpet as part of the “tow package”, power, ground, and here’s the kicker, any guidance as to which wire/where to tap into for the brake trigger wire?

It appears that on a 2005 Jeep Wrangler TJ the brake switch wire used to connect a brake controller is white/tan. I do recommend verifying that it is the correct wire on your 2005 Jeep Wrangler LJ Rubicon using a Test Light # PTW2993. If that wire provides power when the brake pedal is pressed and no power when not pressing on the brake pedal then you have the correct wire to wire in your Redarc Tow-Pro Elite Trailer Brake Controller # RED44FR.
