Question:
What hitch and wiring should I get to tow with my 2021 Cherokee? I'm not sure what to choose out of all of the options?

For your application I recommend using the etrailer Trailer Hitch # e73ZR and the T-One Wiring # C56406. To tow with your 2021 Jeep Cherokee you'll also need a ball mount kit and for that I recommend the Curt Towing Starter Kit # C45534.
I like the etrailer hitch because it has a matte black finish that helps it blend in with the trim on your Cherokee and hide any scratches that might occur from road debris.
The towing kit not only includes a ball mount and hitch ball, but it also comes with standard and locking hitch pins as well as a receiver cover to keep debris out of your hitch receiver.
Attached are some videos for you to check out.
