Which trailer hitch is recommended for a 2021 Toyota Prius AWD-e, LE and XLE models. I'm looking at ll three trims. Also, what wiring harness is needed for a small kayak trailer?

According to Curt, their # C11473 Class I hitch fits all models of the 2021 Toyota Prius and Prius Prime, regardless of trim level so the hitch will work great for you.
For a trailer wiring harness there are two options available. For the AWD-e model, you'd use the Curt # C69KR and for front wheel drive models, use # C56353. You'll also need a ball mount like # C45521, a hitch pin like # PC2 and a trailer ball like part # 19256 for a 1-7/8 or # 19258 for a 2 inch ball.
