Hi, I have a Subaru Impreza 2018 sedan. Can I carry 2 ebikes using the Thule easyfold XT2 rack? Thanks

You sure can.
The Thule # TH903202 EasyFold XT bike rack is compatible with a Class I hitch which uses a 1-1/4 inch hitch receiver. A class I hitch like the Curt # C11466 will have a 200 lb tongue weight capacity, which means that the 45 lb weight of the rack and the combined weight of the bikes needs to come in under 200 lbs. The bike rack has a 65 lb per bike capacity, so at worst the combined weight would be 175 which comes in nicely under the 200 lb capacity of the hitch.
The EcoHitch 306-X7350 is compatible with the Impreza Wagon only, and wouldn't fit the Sedan.
