Question:
I see that there are a handful of different hitches for my 2021 Forester. Which one would you recommend? Is there any advantage to having one has the longer piece hanging down? I plan on using it for a bike rack/cargo trailer depending on where my family and I will be traveling to.

I completely understand where you are coming from. There are quite a few choices for your 2021 Subaru Forester and it can all be a little overwhelming. The biggest differences between the hitches is the style. The standard hitches will have the crosstube visible while the fancier "hidden" hitches (with that longer piece hanging down) will only have the receiver visible.
I personally like the hidden style hitches better because they tend to look a lot cleaner and they don't reduce ground clearance as much as the styles with the crosstube do. As far as quality goes, they are all pretty comparable so I recommend going with the Curt # C13409 for the standard style or the Curt # C47HR for that hidden style. Attached are photos and installation videos for you to check out.
If you don't already have a bike rack or cargo carrier then you might be interested in the Kuat Sherpa 2.0 # SH22G or the 24x60 Reese Cargo Carrier # 63153
