Hi, Im on the verge of ordering a Curt hitch from you. Im needing to determine which bar/ball product I should order to be able to shop for and tow home a PJ or other trailer 20inch deck at the correct height, and am having difficulty finding these specifications for either the trailer or hitch, although I suspect they are standard. thanks!

To determine the correct ball mount and hitch ball for you, you will need to know the hitch height of the Curt Trailer Hitch # C13206 once installed on your 2016 Subaru Outback Wagon, and then the coupler height of your specific trailer.
For the hitch height, we have installed this hitch on a 2016 Subaru Outback Wagon like yours and have found that it has a hitch height of 15-1/4".
Now for coupler height you will want to call the trailer manufacturer and ask, to make sure you get the correct figure.
With the coupler height you can then figure the exact ball mount needed to tow your trailer level. For example if you find that the coupler height of your trailer is 16", then with your 15-1/4" hitch height you will need a ball mount with a 1" rise such as the Curt Ball Mount # C45310.
If you find you have a different coupler height just let me know.
Regarding the correct hitch ball, this will be determined by the coupler on your trailer. Reaching out to the manufacturer will get you the correct size or if you can take a look at the trailer in person you can check the top of the coupler as it will be stamped there.
Next is making sure the shank of the hitch ball matches the ball mount you choose.
The # C45310 uses a hitch ball with a 1-1/4" shank so you would need a hitch ball to match such as the 2" # A-90 or the 2-5/16" # 19286.
