I do have another question: with the extended hitch length I understand it allows me to keep my tailgate down but I am concerned with turning while towing our trailer.

Yes the 18 inch Equal-i-zer shank part # EQ90-02-4500 will work great in your truck hitch and with your Equal-i-zer weight distribution system. The longer length will give you the clearance you are wanting.
