The Curt Class IV Hitch you referenced, part # 14361 would be the correct hitch for the 2004 Ram 1500 unless it already has the factory hitch, or it is a Hemi Sport Quad Cab, a Rumble Bee or an SRT-10 model.
If your truck already has the factory hitch, you will need to go with the Draw-Tite Class IV, part # 41929. This hitch is designed to install so that the receiver sits below the factory receiver. Like the Curt model you referenced, it will not fit the Hemi Sport Quad Cab, the Rumble Bee or the SRT-10 model.
Either hitch has plenty of capacity to handle your 7500 lb camper. I have linked you to the installation instructions for both hitches.
To complete your towing set-up, you might also need the following:
Ball mount, part # 40331
2 inch trailer ball, part # A-90
2-5/16 inch trailer ball, part # 19286
