2021 F150, need a 4”-5” rise. I am guessing you turn this upside down to get the rise, correct?

You are correct.
To get the 4-3/4" rise you need with the Convert-A-Ball Ball Mount for 2" Hitches - 4-3/4" Rise, 6" Drop - 14,000 lbs # AMSC6HD you were looking at you will insert the ball mount so the portion that the hitch ball installs into will be point up.
You will need a hitch ball with a 1-1/4" diameter shank so I recommend the 2" # A-90 or 2-5/16" # 19286.
