I have a 20121 Subaru Forester. What are the differences between the class ratings?

The difference between the Class ratings for the hitches you were looking at for your 2021 Subaru Forester are a Class II hitch like the Curt Trailer Hitch Receiver - Custom Fit - Class II - 1-1/4" # C12198 have a 1-1/4" receiver tube and a typically a lower tongue weight and trailer weight rating than a Class III hitch. The # C12198 has a 350lb tongue weight rating and 3500lb trailer weight rating
The Class III # C13409 for your Forester has a 2" receiver and a tongue weight rating of 525lbs and a trailer weight rating of 3500lbs.
Any time a Class III hitch is available it is the preferred option as the 2" receiver has quite a few more accessories available really giving you much more freedom to use the accessories you want.
The # C13409 would be perfect for carrying a bike rack like the Thule Helium Pro 3 Bike Rack - 1-1/4" and 2" Hitches - Tilting - Aluminum # TH9043PRO, a cargo carrier, or a ball mount for towing a trailer.
