I am looking at the Curt gooseneck hitch for my 2020 Toyota Tundra, is there anything stopping me from installing on a 5.5’ bed?

We do have an option for a gooseneck trailer hitch for your 2020 Toyota Tundra with a 5-1/2 foot bed, but I checked with Curt and the # C60751 is not a fit for your truck. So I checked with B&W, who confirmed their gooseneck hitch will fit and install in your Tundra:

So while it isn't the hitch you asked about, the Turnoverball is considered by most people to be the premier gooseneck in the industry. The reason is because it has a square base for its hitch ball which ensures optimal strength; what that means is the ball isn't going to turn when you are driving, keeping the connection to your gooseneck coupler totally secure and stable, unlike other hitches that have a round base which ensures a lot of movement.
Since you have such a short bed though, in order to help with turning clearance I highly recommend the 4" Offset Ball for B&W Turnoverball Gooseneck Trailer Hitch for Toyota Tundra # BWGNXA4585.
Another thing that you can use with the offset ball to maximize your clearance is the B&W Extend-A-Goose Gooseneck Coupler # BWTEXA4200.
