Can I tow a 6 x12 aluminum trailer with a GVWR of 2900 lbs with a hitch attached to this?

I have a solution for you, but the Roadmaster Spare Tire Carrier # RM-195125 you were looking at is not designed for towing a trailer.
Instead I recommend using a stacked receiver ball mount like the Gen-Y Adjustable 2-Ball Mount w/ Stacked Receivers - 2" Hitch - 7-1/2" Drop/Rise - 10K # 325-GH-314. You can then use a lighter spare tire carrier like the Curt Trailer Hitch Mounted Spare Tire Carrier # C31006 in one of the un-used receivers of the ball mount while towing your trailer.
You will need to make sure the weight of your spare tire, the # C31006, the # 325-GH-314, and the tongue weight of your trailer do not exceed the tongue weight limit of your 2019 Thor Quantum Sprinter Motorhome. Since you mentioned your trailer only has a GVWR of 2900lbs I doubt you will exceed the tongue weight rating of your hitch.
