We have a great trailer hitch and wiring option for your 2017 Jeep Cherokee, and let's start with the hitch; the best option for your Cherokee is easily the etrailer Hitch # e73ZR.
This hitch is the best because not only does it have a concealed crosstube to keep your Cherokee's aesthetic, but it also has the best bumper clearance and ground clearance of any hitch that fits your Jeep. That means less worry about the hitch scraping the ground on a steep ramp or having to use a longer shank for a ball mount to clear the bumper. The accompanying photo shows how this hitch looks on a 2017 Jeep Cherokee so you can see how it will look on yours.
In regards to the wiring harness for your '17 Cherokee without the tow package, I strongly recommend the Tekonsha T-One Vehicle Wiring Harness # 118605.
Not only have we found that Tekonsha manufactures the most reliable harnesses, but it also has the highest maximum amperage among harnesses available for your Jeep, which means it offers you the best protection against potential shorts. I also always recommend using Dielectric Grease for Electrical Connectors # 11755 on any wiring harness to help protect against corrosion.
I have added links to video installs for you to check out on a 2017 Jeep Cherokee of both the Wiring Harness # 118605 and etrailer Hitch # e73ZR.
