Question:
After a lot of research it looks like this would be the best mud flap to add behind my Winnebago 24J. I have an 84 inch wide space to shield. The ERT00108 seems to be the best fit but leave a 16 inch gap on each side. Is it reasonable to buy two extra mud flaps and cut them to a width that covers this gap on each side? Or, can your recommend a better solution?

Those are good questions, and I agree that the Rock Tamers Heavy-Duty, Adjustable Mud Flap System for 2" Hitches # ERT00108 is the best option for your Winnebago View 24J motorhome. That said, adding and attaching a pair of extra mud flaps isn't going to offer you much more in terms of added protection. Adding mud flaps to fit a motorhome can be difficult, which is why the hitch-mounted Rock Tamers are the best option.
These do adjust from 67-1/4" to 96-3/4" (outside to outside) but are just under 24" wide, which is where I assume the gap you are referencing comes in. I really think you'll be just fine sticking with the Rock Tamers # ERT00108, as they will be able to cover the large majority of debris and offer protection. In the interest of thoroughness I do want to mention there needs to be at least 1" of clearance between the back of the ball mount face and hitch receiver for this mud flaps to fit.
It looks like you have the Falcon 2 Tow Bar # RM-520, so if you are worried about protecting the vehicle you are flat towing, I recommend checking out the Roadmaster Tow Defender Protective Screening # RM-4750 as an option.
I've added links to video reviews for you to check out as well.
