Yes, a 4.80-8 sized tire like the Kenda K371 # AM10004 you were looking at will work well to replace the 16x5.00-8 tires on your garden tractor. These are very similarly sized tires so you aren't going to see much of a difference (if at all) when mounting them to your tractor.
This particular bias ply tire is perfect for agricultural use and it featuers a maximum load of 745 pounds at 90 psi. I have attached a short video review below that you can check out as well.
