Yes, your wheel and tire size is perfectly fine to use with the Roadmaster Tow Dolly part # RM-2050-1 that you referenced. At one point Roadmaster listed this as only fitting up to 16 inch wheels but we've found that's not true currently. The vehicle in the review video I attached has much bigger wheels than that.

Any advice on the AWD model for doy towing? Own a FWD, but trading for a newer AWD FLEX, 2016

I really like the Demco Kar Kaddy Tow Dollies like the part # DM9713093 as they come with disc brakes and an actuator built into the dolly so the braking is all self-contained. Also this has a ramp system which helps quite a bit for lower ground clearance vehicles as well!

In the install instructions I attached for the Demco Kar Kaddy they do call out using an "assistant" for a couple of the steps so an extra set of hands will be needed. The tools needed are all basic hand tools. The most specialized tool would be a torque wrench like the part # ALL944001. Skill level is pretty basic. With basic mechanical skills you'd be totally fine.
