I would like to add a wireless camera to the back of my 5x10 enclosed trailer for better rear viewing. Currently I have the basic 4-pin connector from my 2018 Toyota Highlander Hybrid to the trailer. What are some good options for getting +12V to the trailer for the camera?

It really power your observation camera from your 2018 Toyota Highlander, the first thing you will need is a 7-way with a 12 volt charge, so start by installing the 7-Way RV Upgrade Kit # ETBC7, which is generally used for wireless brake controller compatibility but is perfect for what you're looking to do.
You'll also need the 7-way like # H20046 for your trailer and can cap off the unused wires on both of the 7-way connectors and you can tap your camera's system directly into the 7-way, or the better method is using an accessory battery, for which you'd need a battery box and wire it directly to that, charging the battery with 12-Volt Universal Battery Charger # CTEK56353 when needed.
