I have 2018 CRV. Which size hitch makes sense for a bike rack such as Kuat Sherpa 2.0?

Whenever available I recommend going with a 2 inch hitch over a 1-1/4 inch hitch as this size has better capacities and has more accessories made for it. So for your 2018 Honda CR-V the hitch I recommend is the etrailer.com hitch part # e98848 which has a 2 inch size but also because only the hitch opening is visible so you get a more concealed look. See attached picture and install video.
This will work great with the 2 inch version of the Kuat Sherpa 2.0 part # SH22G that you are considering.
