How do I remove the panal covering the access to the harness connection for a brake controller plug on a 2018 GMC Acadia Denali?

Your 2018 GMC Acadia actually has blunt cut wires for you to splice in a brake controller like the Tekonsha Prodigy P3 # 90195. The last Acadia to use the Adapter # 3026-P that you referenced was the 2017 Limited which was the same as the 2016 model year. The 2017 New Body and newer have the blunt cut wires up under the dash.
I took a look at the online version of the owner's manual for your 2018 Acadia and on page 278 it says that the blunt cut wires can be found above the parking brake assembly and you will need to connect the following wires from the Acadia to the following functions on your brake controller:
Blue - Trailer Brakes
Red/Black or Red/Blue - 12V Power
White/Blue - Stoplight Signal (only gets hot when pedal is pressed)
Black - Ground
You will want to verify this in your copy of the owner's manual. If you don't have a physical emergency brake pedal then I was able to find online that someone had to remove the square access tab next to the gas pedal and a 7mm socket to remove the screw holding that panel in. Then before removing the bottom panel you need to remove the center console side panel. Please note that this info came from a consumer and not the manufacturer.
If you don't already have a 7-Way connector on your Acadia (which is required for a brake controller) then the wiring is already run and you just need to install the T-One # 118276. I have attached an installation video of this on a 2017 Acadia that you can reference.
