For your 2010 RoadTrek 190, I recommend the Roadmaster Rear Anti-Sway Bar for Trucks and Motor Homes # RM-1109-175 which is a confirmed fit for your vehicle and should not interfere with your generator. I've attached an installation video to assist, but it does not have the generator in that location. I also recommend the front sway bar # RM-1109-149 which is also confirmed to fit. This combination will work very well for your vehicle and will minimize sway and driver fatigue by improving stability through weight transfer. These bars will also reduce body roll on corners.

I'm assuming this will also fit the a 2009 Roadtrek 210 with a generator mounted behind the diff?

@DanB Short answer, likely yes, but only if your Roadtrek 210 is on the Chevy Express 3500 chassis, which most of them are. The # RM-1109-175 is designed specifically for Chevy Express and GMC Savana 3500/4500 vans and cutaway chassis from 1997–2020. Since a 2009 Roadtrek 210 is typically built on that exact Express 3500 platform, it lines up with what this sway bar is made for. That said, that generator is definitely going to be a factor. If you’ve got a generator mounted behind the differential, that’s right where the sway bar needs to go, so interference is a real concern. You’ll want to check the space carefully, and if it’s tight, you may need to move or modify the generator mount or consider skipping the sway bar.
