The best way to determine the correct ball mount for your vehicle and trailer combination is to measure from the ground to the top of the receiver tube on the vehicle, and from the ground to the bottom of the trailer coupler, with the trailer level. If the hitch height is greater you will need a ball mount with a drop equal to the difference and if the trailer coupler height is greater you will need a ball mount with a rise equal to the difference. You will also need to make sure the ball mount selected has a weight rating high enough for the trailer you will be towing.
I am including a link to a FAQ page on choosing the correct ball mount.
You will need to check with a Volkswagen dealer to find out the correct length of the factory ball mount.
The Convert-A-Ball Ball Mount, part # AMSC2 you have referenced fits a 2-inch hitch and has a 3/4-inch rise or a 2-inch drop. It measures 9-1/2 inches from the center of the hitch pin hole to the center of the ball hole.
The correct 2-inch ball to use with the the # AMSC2 ball mount is the Tow Ready 2 Inch Hitch ball, part # 19247. You will also need the Pin and Clip, part # PC3.
