Is this countertop extension strong enough to hold up the weight of a Kitchenaid stand mixer?

The Camco Oak Accents RV Countertop Extension # CAM43421 includes a full-length piano-style metal hinge as well as a folding metal support brace that holds it in the upright "in-use" position. Both of these metal supports install with included hardware.
So long as the surface to which you mount this countertop extension is strong enough you can certainly use the extension to support an item like a Kitchenaid mixer. The extension itself does not carry a specific weight rating so it really comes down to the mounting point you select.
