I have an 81 Coleman tent trailer with current 20.5x8x10 fat tires on it. I need new tires and new spare, but I want to get a slimmer style tire, not the fat boys. Current rims are a 5 bolt. What size of rim/tire am I looking to get to fit? Thanks.

Your 20.5 x 8-10 sized tires are the same as a 205/65-10 sized tire using new measuring. The rims are 6 inches wide.
A replacement size that's the same 20.5 inch diameter are 4.80-12 sized tires but the weight capacity is much lower. For example the Kenda # AM30670 is rated for 990 pounds at 90 psi. Your current tires are likely rated higher. The rim is 4 inches wide.
If you have the clearance to go with a larger diameter tire you may be able to use size 145/80-12 which also use a 4 inch rim. The total diameter is 21.3 inches so you'll need to make sure you have at least 4 inches between the tread and the underside of your fenders. The Kenda # AM31202 has a max capacity of 1,220 pounds at 65 psi. This is also a radial tire which will run cooler than the bias tire.
All of the part numbers I've mentioned have a 5 on 4-1/2 bolt pattern. I've linked an article to help you find if this is what your current rims are.
