Question:

I have a 2017 Subaru Forester and I want to put a hitch on it. According to Subaru the max towing is 1500, your website sells a hitch mount rated for 3500. Could I tow a 1750 lb trailer?

The 2017 Subaru Forester does have a max towing capacity of 1500 lbs. In this case, as in many others, the hitch is rated higher than the vehicle itself.

Unfortunately this means that your Forester is restricted to the weakest capacity and that means you cannot tow a 1750lb trailer safely.
