what is the insulation color of the tail light wires on the pathfinder?

There is no standard for wire colors so the only way to know for sure what the functions are would be to test the wires using a circuit tester such as # PTW2993. But that is not necessary because there are T-connector wiring harnesses that fit your 2000 Nissan Pathfinder so you will not have to test and splice wires.
You can use Tow Ready wiring harness # 118361. I have linked a video showing an example installation for you.
While a hardwire harness could work there are none officially recommended for your Pathfinder.
