Question:
i am looking a getting a hitch set up for my 2007 volkswagen rabbit. i am not planning on towing anything but using it in conjunction with my dirtbike carrier. my question is it says tongue weight is 250lbs. does that rating change with rack type setups? i know my bike weighs roughly 300 lbs and the carrier probably weighs an additional 50-80 pounds is this to much for the hitch to handle/ vehicle to handle?

The hitches for your 2007 Volkswagen Rabbit have only 1-1/4 inch hitch openings and a 200 lb. tongue weight. Your dirt bike weighs more than that, so your options are limited but I have a solution that will work for you. Please note that you will always want to check your owners manual regarding any towing restrictions or limitations for your vehicle.
An alternative to a hitch mounted carrier would be to tow your dirt bike behind your vehicle using a utility trailer. I would recommend the Draw-Tite brand hitch # 24825. We offer a utility trailer # K2MMT5X7 that would be able to haul your load. If you get this trailer, or any other open utility trailer, you would need also purchase a wiring harness. The ZCI Circuit Protected Vehicle Wiring Harness w/ 4-Pole Flat Trailer Connector and Installation Kit
Item # 119250KIT will work for your vehicle and includes everything you will need to install it to your Rabbit. This harness allows you to have power run to the trailer's taillights.
You would also need to purchase some accessories to allow your dirt bike to be towed properly in the trailer. I recommend the Rack'Em Manufacturing Removable Wheel Chock # RA-17 this will fit your tire and hold the bike in place while the tow straps # EM05729 and D-rings # MMP543 secure it to the trailer. The final connection piece from the car to the trailer would be with a 2 inch ball # 19258 to connect the trailers coupler to the vehicle.
