With the curt hitch do I need to do anything to my transmission? And what will be my max towing capacity?

The towing capacity of your 2015 Chrysler Town and Country is going to depend on a few factors. Take a look at the picture I have included from the owner's manual. It illustrates the capacity of the vehicle in certain scenarios. At most the van can tow 3,600 pounds.
I do recommend a transmission cooler because when towing or even when just carrying a lot of weight in the van, it puts additional strain on the transmission. A supplemental cooler will help to lower the fluid temperature which is good for the transmission.
The most popular cooler is # D13503. If your van has a closed transmission system (if there isn't a dipstick to check the transmission fluid level) then you will need to have the cooler professionally installed.
For a trailer hitch there are several options with the most popular being the Curt trailer hitch # 13364. The hitch is rated higher than the van so you will need to go by the lower capacity of the van.
Since you plan on doing some towing I recommend etrailer ball mount kit # EBMK4EL. It comes with a ball mount with a 2-3/4 inch rise or 4 inch drop, interchangeable ball set, hitch pin with clip, and a storage bag.
If the ball mount kit does not have the right rise or drop to tow the trailer level, use the link I have included that explains how to measure to choose a ball mount to tow the trailer level.
And for trailer wiring you can use # C56331 to add a 4-Way flat connector. I have included links showing example installations of the hitch and wiring for you.
