Can a 2003 Ford Expedition Eddie Bauer edition 2wd 5.1 liter engines pull a camper if so what size camper.

I looked up your 2003 Ford Expedition with a 5.1 liter engine and found a Ford towing guide from 2003 and for your vehicle the towing capacity they list is 6,000 lb trailer towing capacity without the use of a weight distribution system or 8,900 lbs with the use of one. To take full advantage of the WD capacity you'd want the Reese Strait Line kit part # RP66084 instead of the RP66083 you referenced as it has a tongue weight range of 600-1,200 lbs.
For a 2 inch ball you would want part # A-90 and for a 2-5/16 inch ball # 19286.
